Which means it probably couldn't go immediately before the incursion, as for the last month (according to my Time Runs Out calendar), there are only a couple dozen universes.

That's not actually where I got that from. As we can see In the flashbacks, it has to be Like Cage or Iron Fist. And Like Cage is seen in a previous segment of the same issue spending his final moments with his family, meaning it has to be Iron fist.
